6 egg whites
3 oz. cooked chicken breast, diced
3 Tbsp. fat-free Parmesan cheese, grated
1-1/2 tsp. fresh basil, choppedCoat a nonstick skillet with cooking spray and place over medium heat. Lightly beat the egg whites with a fork and add to the pan. Stir constantly until halfway set, then add the diced chicken and cook through. Add salt and pepper to taste, garnish with fresh basil, and serve. Serves 1.
